All this snow and cold weather has me wishing I was on the beach, sipping a fruity drink out of a coconut. Since that won’t be happening anytime soon, I decided to make some coconut cookies with a creamy Malibu rum filling. One bite of these cookies and it’s like you’re right on the beach!
These cookies are quick and easy to make since they start with a cake mix. Feel free to top the cookies with shredded coconut or mix it straight into the batter. I didn’t have any shredded coconut on hand so I used red sprinkles on top to give the cookies a little color.
COCONUT COOKIES WITH MALIBU RUM FILLING INGREDIENTS
MAKES ABOUT 3 DOZEN
- 1 box coconut cake mix
- 1/3 cup water
- 1 egg
- 1/4 cup melted butter
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon milk
- 1 tablespoon Malibu rum (I used mango flavor)
WHAT TO DO
Preheat oven to 350. Mix cake mix, water, egg, and butter together in large bowl until well blended. Drop by teaspoon-fulls onto an ungreased cookie sheet. Bake for 10-12 minutes, or until cookies just barely start to brown around the edges. Let cookies cool for 2 minutes on cookie sheet before transferring to a cooling rack.
To make the frosting: using an electric mixer, slowly add the sugar to the butter until completely mixed. Blend in milk and rum.
Once the cookies are cool, sandwich two cookies together with a layer of thin (or thick!) icing. Take a bite, close your eyes, and feel the warm breeze on your face….
